Caldo de Paella de pescado - broth for a Spanish sea food paella and fish paella

Liquid cooking broth, ideal for preparing fish and seafood paellas, made from rapeseed water, leek, celery and carrot for the broth and with a mixture of tomatoes, crabs, Norway lobster, white wine sauce, onions, extra virgin olive oil, sweet and sour pepper and garlic.

PREPARATION SUGGESTIONS: (1) Heat the pan over low heat, add a dash of olive oil and fry the rice for a minute. (2) Add the broth and bring to a boil over high heat for 5 minutes. (3) Reduce the heat and continue cooking the rice for about 15 minutes. (4) Add shrimp, crayfish, clams, etc. to taste. (5) Let the paella rest for 5 minutes before serving; it is also an ideal broth for making fideuadas or as a base for a fish soup.
Shake well before use.
