Over 900 cheese factories in Spain produce around 120 different types of cheese in different flavors and aromas. Around 30 different types of cheese are protected and recognized by the EU. Similar to the Spanish cava and wine, they have the addition Denominación de Origen, D. O., just like i.e. the well known Spanish cheese Manchego with its origin in La Mancha.

Chese varieties

Cheese from Spain is made from sheep's milk (Spanish sheep cheese, Queso de Oveja), goat's milk (Spanish goat cheese, Queso de Cabra), cow's milk (Spanish cow cheese, Queso de Vaca), or a mixture of different types of milk (Spanish mixed cheese, Queso de Mezcla).

Spanish cheese can vary in consistency depending on how it is made and is therefore very versatile, which is very tempting for cheese lovers to buy Spanish cheese. It can be hard and dry and with this consistency it is perfect to drizzle the cheese with premium olive oil.
But it can also be soft, so soft that it can be spread on bread.
