Ingredients for 4 persons
1 kg | Pepperlings |
1 | good splash of olive oil |
5 | eggs (mid sized) |
2 | garlic gloves, as preferred more |
Preparation
Add the olive oil to the pan with the chopped garlic cloves, fry briefly on a low heat so that the garlic is not burnt and add the peppers.
Bring to the boil over a low heat.
When the chillies are ready, add the scrambled eggs to the pan and mix well with the chillies.
Leave on the hob for about 8 minutes until the egg is done.
A side salad with a vinegar and oil dressing goes very well with this dish.
