Spanish green olives with low salt content   

Yeyé sliced green olives are an aperitif that few know about, but when tasting them, everyone is fascinated by their good taste.
They have an intense green colour and are accompanied by fine aromatic herbs. The type of olive and its preparation give them a delicious, sweet taste.

Unlike other olives, Yeyé olives have a low salt load. This makes them perfect for people on a low-salt diet, as it helps prevent fluid retention.

The main ingredient for its production is caustic soda. This ingredient removes the strong and characteristic bitterness of each olive. The base of the dressing is finely chopped garlic together with aromatic herbs such as oregano, thyme and fennel.

They can be eaten straight from the jar, as an accompaniment to starters or more elaborate dishes. They also usually accompany salads with anchovies, salmon or cod.
